Apple–Cranberry Pecan Ginger Shortbread Crumble Bars

SHORTBREAD / CRUMBLE

Ingredients

155 g allulose
140 g unsalted butter, softened
2 tsp vanilla extract
275 g plain GF flour blend
50 g pecans, pulsed in a food processor until mostly fine with some small pieces remaining
3/4 tsp xanthan gum (Omit if your GF blend already contains xanthan gum)
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp ground cardamom
1/4 tsp ground nutmeg
1/8 tsp ground clove
20 g crystallized ginger, minced very finely

APPLE–CRANBERRY FILLING

Ingredients

500 g sautéed Granny Smith apples, cooked down and cut into bite-sized pieces
100 g dried cranberries
40–50 g allulose, depending on how sweet your apples already are
1 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg
1/8 tsp ground clove
15–20 g crystallized ginger, chopped into small pieces
10 g cornstarch
2 Tbsp cold water, for the slurry
1 tsp vanilla extract
Pinch of salt

MAKE THE SHORTBREAD

Put the allulose and spices into a large bowl.

Add the softened butter and vanilla. 

Mix with a wooden spoon or rubber spatula until thoroughly combined or pulse in a food processor till pea size butter. 

Do not cream it in a mixer. We want a dense, buttery shortbread—not an aerated cookie that falls apart.

In a separate bowl, whisk together the GF flour, pulsed pecans, xanthan gum and salt.
Add the dry ingredients to the butter mixture.
Add the finely minced crystallized ginger.

Mix until the dough begins clumping together. Give it a gentle knead with your hands until you have a fairly crumbly but cohesive cookie dough.

No need to worry about overworking it—there is no wheat gluten here.

Set aside while you prepare the filling.

MAKE THE APPLE FILLING

Your Granny Smith apples are already sautéed in butter and allulose, so start with the cooked apples.
If there is a lot of loose liquid in the apples, cook them for a few minutes longer until you have a thick, apple-pie-filling consistency.
Stir the cornstarch into the cold water to make a smooth slurry.
Add the cornstarch slurry to the warm apples and stir gently until the filling thickens.
Remove from the heat.
Stir in the cinnamon, cardamom, nutmeg, clove, vanilla and salt.
Fold in the dried cranberries and chopped crystallized ginger.
Taste the filling. Add the additional allulose only if it needs more sweetness.

Let the filling cool until warm rather than piping hot before assembling the bars.


ASSEMBLE

Line a 9-inch square pan with parchment.

Take approximately ⅔ of the shortbread dough and press it firmly and evenly into the bottom of the pan.

A small offset spatula or the bottom of a measuring cup works beautifully.

Spread the apple-cranberry filling evenly over the shortbread.
Crumble the remaining ⅓ of the shortbread dough over the top.
Don't completely cover the filling. Let little windows of apple and cranberry peek through.

OPTIONAL FINISH

For an extra chocolatier-style finish, scatter a small amount of chopped pecans over the crumble before baking.

I would not add chocolate to this batch. The pecan + ginger + cranberry + fall spice combination is already doing the interesting work, and keeping this one chocolate-free lets it taste unmistakably like an autumn apple pastry.


BAKE

Bake at 375°F for approximately 55–65 minutes.

Start checking around 55 minutes.

You're looking for:

golden-brown crumble
firm-looking shortbread edges
and, most importantly, visible bubbling from the apple filling

The filling needs to actually bubble so the cornstarch fully thickens.

If the top is browning too quickly while the filling is still bubbling, loosely tent with foil.



Look for these doneness cues at 375°F:

Edges: distinctly golden brown
Top crumble: golden and set
Center: no longer looks wet or doughy
Apple filling: actively bubbling, especially toward the center

You're aiming for about 55–65 minutes.

The bubbling is important because it tells you the cornstarch-thickened apple filling has gotten hot enough to fully activate the starch.

Then: cool completely in the pan. Ideally refrigerate for about 1 hour before cutting so that gorgeous filling firms up and you get clean craft-service squares.

If you want a temperature target, I'd use roughly 200–205°F in the shortbread portion, but visual bubbling + golden crumble is the better test for these bars.


COOLING — IMPORTANT

Let the bars cool completely in the pan.

For the cleanest craft-service cuts, refrigerate for at least 1 hour after cooling.
