Cabbage beef casserole with cashew sauce

ingredients  

1 lb ground meat: beef, pork, chicken - better if you season as sausage

1/2 onion diced 

3 stalks celery diced 

1 clove garlic 

1 small zucchini diced 

2 roma tomatoes diced 

1/2 head cabbage large shred 

1/2 cup butternut squash (used the roasted from freezer ) 

1 tsp onion and garlic powder 

1/2 tsp paprika 

1/2 tsp powered mustard 

1 sprig thyme

shredded cheese of choice and amount - i used cheddar and just topped the dish  

olive oil for saute 

cashew sauce

1/2 cup cashews unsalted 

2 cup water 

1TB greek yogurt 

1TB corn starch 

make 

in a large oven safe saute pot add a touch of olive oil add the onions, celery and garlic and saute for a few minutes.

add the ground meat/sausage and saute until meat is mostly cooked then add in the zucchini and tomatoes. 

next add the cabbage and saute until wilted. 

make the cashew sauce, in a high speed blender (using a blendtec) add the ingredients for the sauce and blend on "soup" (if you don't you can soak or boil the nuts and then blend them - still need to blend) 

once the sauce is fully blended and silky smooth then add to the saute pot and top with shredded cheese. 

place into the oven at 350ºF for 35-45 minutes. Check the dish at 35 and if all the liquid is gone then the dish is ready. still soupy then add more time.
