zucchini bites - low carb TEST

 

  • 1 medium zucchini
2 eggs, lightly beaten
  • 1/2 cup + 2 tablespoons fine almond flour
1 tsp. garlic powder
  • 1 tsp onion powder 
1 tsp dried rosemary
  • 1/2 c shred pecorino 
  • 1/2 tsp kosher salt 
Set air-fryer to 400° F
Grate the zucchini onto a cheesecloth, a strong paper towel, place in a rices to squeeze.   
Place the squeezed zucchini into a bowl.
Add everything together and mix to combine. 
Use a scooper to then place into the preheater air fryer. 
8-10 minutes in the air fryer and do not over crowd. 
Add salt to the top 


Low-Carb Zucchini Tots 

Ingredients

1 medium zucchini (about 250–300 g)
1 whole egg + 1 egg white (or 2 whole eggs if you don't want half an egg left over)
½ cup fine almond flour
½ cup finely shredded Pecorino Romano
1 tsp garlic powder
1 tsp onion powder
1 tsp dried rosemary
½ tsp baking powder (optional but recommended)
½ tsp kosher salt (you may not need more because the Pecorino is salty)

Method

Preheat air fryer to 390°F.
Grate the zucchini.
Salt it lightly and let it sit for 20 minutes.
Squeeze it as dry as you possibly can (your potato ricer is perfect for this!).
Mix everything together.
Let the mixture rest 5 minutes so the almond flour absorbs moisture.
Scoop about 1½ tablespoons each.
Flatten them slightly into little patties instead of balls.
Lightly spray with avocado oil if you use it.
Air fry 8 minutes, flip, then cook another 4–6 minutes until deeply golden.

If the mixture is...

Too wet: add another tablespoon of almond flour.
Too dry: add a tablespoon of beaten egg.
