Mediterranean tuna salad spread  

Ingredients

2 cans tuna (5–6 oz each), drained very well
2 Tbsp tahini
1½ Tbsp lemon juice
1–2 Tbsp olive oil
2 ribs celery, finely minced
2 Tbsp fresh parsley, finely chopped
1 tsp lemon zest
1 Tbsp capers, chopped (optional, but excellent)
¼ tsp garlic powder
Freshly ground black pepper
Salt to taste 

In a bowl, whisk together the tahini and lemon juice. It will thicken and look a little grainy.
Whisk in 1 tablespoon olive oil until smooth. Add another tablespoon if needed.
Fold in the tuna, celery, parsley, lemon zest, capers (if using), garlic powder, and pepper.
Taste and adjust:
More lemon juice for brightness.
More tahini for richness.
More pepper than you think you need—it works well with the tahini.

Refrigerate overnight.
