chocolate Date paste cake - vegan, date sweetened, gluten free

 Chocolate Date Applesauce Cake: 350ºF 30-40 minutes 

Wet

1 cup date paste
1/2 cup unsweetened applesauce
1/2 cup olive oil (or avocado oil)
1 flax egg 
(1 Tbsp flax + 3 Tbsp water)
2 tsp vanilla
1 tsp almond extract
2–4 Tbsp soda water 

Dry

1 cup almond flour
1/2 cup King Arthur Gluten-Free Measure-for-Measure Flour
1/2 cup cocoa powder
2 1/2 tsp baking powder
1/2 tsp salt
slivered almonds on top of cake batter before baking 

MAKE

Mix flax egg and let gel 5–10 minutes.
Whisk date paste, applesauce, olive oil, flax egg, vanilla, and until smooth.
In a separate bowl, whisk dry ingredients.
Combine wet + dry until just mixed.
Rest batter 5–10 minutes (helps GF flours hydrate).
Pour into greased 8-inch pan or lined 9-inch pan.
Bake at 350°F (175°C) for 30–38 minutes, until center is set.
