oven 350ºF 45 minutes or so
1 c cottage cheese
2 eggs - one whole one just whites
1 large zucchini (grocery store not a garden giant)
1/4 tsp: garlic powder, onion powder, paprika
1 1/2 tsp dry mustard
1/2 tsp kosher salt
1/4 cup pecorino
1/2 cup skim mozzarella dices/ sliced your choice
in a blender, add the cottage cheese, egg and spices. blend till smooth.
shred or slice the zucchini thin.
shred, slice or dice the mozzarella.
shred/micro plane the pecorino.
place everything in a banking dish and mix to combine.
into a preheated 350ºF and bake covered for 40 minutes and then uncover for the last 5 -10 minutes to slightly brown the top.
notes:
i have made this twice and the baking seems to firm up around 35-45 and i will come back and make more notes as when i make it again.
