7 in the silicone moulds for eggs and other items
3 eggs
1/4 cup cottage cheese
1/4 cup soft cheese
1/2 cup hard cheese
1/2 cup of "fixing" -cooked meats and/or raw or cooked vegetables: bacon, sausage, ham, wilted spinach, roasted pepper, green onions
Blend the eggs and cottage cheese until smooth.
prep the desired fixings- first test will be spinach & bacon
prep the hard and soft cheese of choice- first test cheddar and no soft cheese
mix the egg custard with the fixings and cheese and then pour into the prepared silicone moulds
place into the pressure cooker on a wire rack and cover the silicone and if you have more than one mould in use you can stack but add time
pressure for 8 minutes
let it pressure release for 5 minutes
take out the egg bites and they should easily slip out of the moulds
NOTES:
the fixings fall to the bottom and all the cheese sat in the bottom.
Next time i will not use fine shredded cheese i will try thin slices that i will add in once the custard has been poured in
