Walnut date cookies - wheat free/GF

 walnut date cookies- 350ºF 12-15 minutes 

1 cup rolled oats (96g) - pulse in food processor large cut
¼ cup chopped walnuts (30g)
½ cup chopped Medjool dates (85g)
1 large egg
¼ cup almond butter (60g)
1 teaspoon vanilla extract (5ml)
¼ teaspoon cinnamon
⅛ teaspoon sea salt

MAKE

Preheat oven to 350°F (175°C)
Line a baking sheet with parchment paper
Ensure all ingredients are at room temperature for best binding

In a large mixing bowl, combine rolled oats and chopped walnuts
Ensure dates are finely chopped and slightly sticky
Add dates to the oat mixture, breaking up any clumps
    in a separate bowl, whisk the egg until lightly beaten
    Add almond butter and vanilla extract
    Mix until smooth and well combined
      Pour wet ingredients into the dry mixture
      Stir thoroughly until all ingredients are evenly distributed
      Let mixture rest for 5 minutes to allow oats to absorb moisture

      Using a tablespoon measure, scoop dough onto prepared baking sheet
      Gently flatten each cookie with the back of a spoonLeave space between cookies for slight spreading
      Bake for 12-15 minutes until edges are lightly golden
