pistachio date cake GF

CAKE  bake 350ºF 30-35 minutes 8x8 pan with parchment

1 cup (175 g) pitted dates, chopped & drained 
3/4 cup (180 ml) hot water
2 large eggs
1 tsp vanilla extract
¼ cup (60 g) melted coconut oil or butter
1 cup (100 g) almond flour
1 tsp baking soda
¼ tsp salt
½ cup (60 g) chopped pistachios (or walnut, pecans) note: used both at 60g)

make 
pour hot water over the dates and let them sit for 10 minutes to soak them mash.

combine the eggs, vanilla and butter/oil and then add the dates until glossy and smooth. 

fold in the dry ingredients stir to combine and then add the walnuts and any other nuts/choco/etc.

pour into a 8x8 pan with parchment and bake 350ºF 30-35 minutes or until a toothpick/skewer comes out clean. 


NOTES: 
batch #2
soaked the dates for a shorter time and needed to use some of the drained liquid back into the batter to thin it out. 
added in chocolate chips, walnuts and dried pears. 
I added 1/2 cup of gf flour and a few TB of the date water. 
Baked for 40 minutes
