Grilled italian chicken wings

chicken wings 

2 lbs wings 
kosher salt 

marinade 

1/4 olive oil 
2 tsp oregano
2 tsp rosemary 
2 tsp garlic & onion powder 
1/2 tsp cayenne pepper or pepper flakes 
2-3 cloves garlic smashed 

dressing 

3 TB butter melted and cooled
3 TB olive oil 
1 TB agave syrup or sugar
1 lemon juiced
1TB capers drained 
2 cloves garlic minced
1 TB fresh parsley - dried ok use less 
1TB fresh oregano - dried ok use less  

make marinade

dry the wings and add salt
place the marinade ingredients into a bowl and toss the wings to coat and then let them sit for 4-8 hour or overnight. 

Preheat the grill/bbq and then remove the wings from the marinade leaving the bits behind and let the oil drip away a bit. 

Arrange the wing onto the hot grill and reduce the heat to med-low. 
Cook 20-25 minutes checking every five minutes and move on the grill to keep them in a good spot. 

Once cooked properly (165º -180ºF) then add the dressing.

make dressing 

Melt the butter and add the garlic to lightly flower in the butter- if using dried herbs you can place them in while the butter cool down. 
Add the remaining ingredients and stir to combine.
