brookies bars cassava vegan

brookies - 350ºF 20 minutes 8x8 0r 9x9 pan with parchment

choco chip cookies 

wet

1 stick - 1/2 cup butter softened 

3/4 cup sugar or 1 cup allulose 

2 eggs 

2 TB honey or maple syrup 

dry

1 cup / 130 g cassava flour 

1/2 tsp baking powder 

1/2 tsp sea salt 

1 1/4 cup chocolate chips 

1/4 cup pecans 

make cookies dough

in a mixer with a paddle attachment, add softened butter and sugar. 

Mix on high until lighter and fulffy.

Next add the eggs in one at a time and then the honey and vanilla and mix on high and scrape the sides for 1 to 2 minutes. 

Add the dry ingredients and mix - this will be thick. 

add the chips and nuts and mix on low until just combine.

dry 

3/4 cup almond flour 

2 TB tapioca starch 

1/8 tsp baking powder 

1/8 tsp salt 

3 TB cocoa powder 

wet 

1/2 tsp vanilla 

2 tsp coconut oil 

1 TB applesauce 

1/2 cup sugar or 3/4 cup allulose 

make brownies

In a bowl add the dry ingredients and stir to combine. 

add the wet ingredients and mix till a smooth dough. 

make the brookie 8x8 or 9x9 pan lined with parchment

Take scoops of each of the doughs and press into the pan. 

Then even out the dough with a spatula and top with more chips and press them into the batter.

Bake for around 20 minutes - golden on top.

cool before serving
