Pretzel bites GF trials

 Pretzels bites GF: 425ºF 12-15 minutes 

DRY 

2 cups GF flour 

1 tsp salt 

WET

2 1/4 tsp yeast or 1 packet 

3/4 cup warm water (111ºF)

1 TB sugar 

2 TB butter melted and cooled 

WATER BATH

1 liter water 

1 TB baking soda

2 TBS brown sugar or white sugar if you don't have brown sugar. 


MAKE 
proof the yeast in the warm water and sugar. 

combine the flour and salt in a bowl - set aside.

Once the yeast has proofed mix the wet ingredients and knead for 5 minutes. 

Remove the dough from the bowl onto a cutting rolling board and cut into bit sized pieces. 

Prep the water bath and bring to a boil.

drop the dough into the water bath and boil 30 sec to 1 minute depending on the size of the dough.

once removed from the water bath place on a cooling/dry rack and sprinkle with coarse salt. 

place onto a parchment covered baking sheet and bake 425ºF for 12-15 minutes (you can brush with egg wash if desired or not vegan)
