orange GF quick sweet bread




QUICK BREAD: 350ºF 40-50 minutes 12x4x4 pan recipe 
1 2/3 cup AP flour 
1 cup almond flour 

3/4 tsp xanthan gum

1TB baking powder 

1 tsp salt 

RUB

1 22/3 cup sugar (2 cup allulose) 

5 tsp (1 TB + 2tsp) orange zest 

WET

3 eggs 

1 cup greek yogurt 

2 tsp vanilla

1/2 cup butter melted cooled 




MAKE

Combine the dry ingredients together and set aside.

Zest the orange and add it into the sugar and rub together. 

In a stand mixer (or by hand) add the eggs and sugar whip until pale and frothy.

Add in the remaining wet ingredients and mix until combined. 

Add in the dry ingredients to the wet and mix to combine 

but DO NOT OVER MIX.

Fold in the ADD INS - dried cranberries, nuts, chocolates you hearts desires.

Prepare a 9x5 bread pan with parchment paper and add the dough into the pan - you can top with more berries, nuts, chocolates.

Let the dough stand for 15 minutes before baking to help the flour absorb the liquids - this helps with rise and texture but you don't have to do this. 

Bake in a preheated 350ºF oven for 40-50 minutes. 

If you use a larger pan the time for baking will increase - the bread should look golden brown and a metal skewer comes out clean. 

NOTE:

Totally too wet at 45 minutes- added 15/and I’ll check then

I think this recipe would have done fine in the 12x4x4 will try next time 

The dough once baked felt too oil - i am reducing the butter in half in the 12x4 recipe but i am going to add some apple sauce

55 minutes in total but when I cut it open the middle sections we soft and some we more raw. 

The top browned fast, next time I want to cover the top with foil once it was reached a nice browned top. 

Baking time seems more to 60-65 minutes

1 TB orange zest 

WET

2 eggs 

1/2 cup greek yogurt 

1 tsp vanilla

1/2 cup butter melted cooled (1 stick/8 tbsp / 4 oz / 113g)

1/2 cup apple sauce (or 1/2 cup more butter)

ADD INS

1/2 -3/4 cup dried cranberries (or other dried fruits_ used dates, pears, cherries) 

options: white or dark chocolate chips, pecans, walnuts, pistachios)
