frittata with greek yogurt

CUSTARD:

 12 eggs 

1/2 cup greek yogurt 

3/4 cup low moisture cheese using manchego and cheddar 

FILLINGS: amounts based on taste

green chilies

roasted cherry tomatoes - a few handfuls and cut in half 

spinach - sauteed around 1 cup 

1-2 shallots - sauteed 

zucchini - sauteed
