1 pork butt with bone in - brown all sides
1 onion large sliced then cut in half
6 cloves garlic
3 stalks celery diced
Chilies - I had poblanos, jalapeños and Serrano roasted
3 tomatillos
1 15 oz can tomatoes crushed
1 can Campbell tomatoes soup (Puebloan secret)
Bay leaf
Oregano MX
Adobo powder
Chicken broth (I made with chicken carcasses from rotisserie chicken and a few smokes turkey wings from the freezer)
Salt
Water to cover the pork butt (if not using broth) and then use bouillon to make broth
