Pear Chocolate cake: 350ºF 40-50 minutes
DRY
3/4 cup GF flour
1/4 cup almond flour
1/4 tsp xanthan gum
1 tablespoon baking powder
1/4 teaspoon salt
WET
3 eggs, at room-temperature
1 stick butter - browned
3/4 cup sugar
3 pears, peeled, in a small dice (I used anjou, but would recommend a softer variety, like a bosc or any other of your favorites)
3/4 cup bittersweet chocolate chunks
prep a 9" springform pan with parchment.
Sift all the dry.
Brown the butter in a sauce pan.
In a stand mixer or by hand, beat the eggs until pale and thick.
Add the sugar to the eggs and beat for a few minutes.
Start to add the dry ingredients and browned cooled slightly butter to the egg/sugar in the mixer. Do the add ins in thirds.
Next pour the batter into a prepared baking dish and then top with the pears and chocolate chunks.
