pear chutney for grill cheese

INGREDIENTS 

1 TB olive oil  
1/4 cup diced onion 
2 tsp ginger minced or microplaned 
2 TB apple cider vinegar 
2 pears diced 
4 dates minced 
1 lemon zest 
1/8 tsp chili flakes 
1/4 tsp salt 

1/4 cup water 


MAKE 

Prep the pears by peeling, coring and diced. 

In a saucepan over medium-low heat and add the onions, for several minutes until fragrant.

Next add in the ginger and apple cider vinegar, stir the pan to make sure the onions are not sticking. 

Follow with the pears, dates, salt, zest, water, and chili flakes.

Continue to cook,making sure to stir.

When the pears softened and the mixture thickens up the chutney is ready. 

If the mixture looks too think add in water a TB at a time. 


SANDWICH: serve pressed or open faced

Sourdough bread or bread of choice

Pear chutney on one side 

Sharp cheddar cheese or cheese of choice (brie, gouda, etc)

optional meat: prosciutto, ham, smoked turkey, etc. 

butter for outside of bread

MAKE 

if pressing you can use a panini press or in a cast iron skillet- butter the outside surface of the bread, build the sandwich and then place in the press or skillet and toast until the cheese has melted and the outside is golden brown.

if open face place the bottom buttered bread on to a sheet pan and then build the sandwich then place it into a toaster oven or broiler and heat up until the cheese has melted.....
