WET:
1/2 cups chopped pitted fresh plums/or prunes - coarsely chopped
200 g bananas mashed
3/4 cup sugar, divided
4 tablespoons butter
1/3 cup plain yogurt
2 large egg, room temperature
3/4 cup water/ milk/ soda water (your choice)
1 tsp vanilla
- DRY:
- 2 cups all-purpose flour / equivalent gf mix using King Arthur and almond flour 50/50
- 1/2 tsp xantham gum
- 3 teaspoons baking powder
1 tsp cinnamon
- 1/2 teaspoon salt
- 2 tablespoons coarse sugar to top
MAKE:
Preheat oven to 350°F. Grease or line a 9x5-inch loaf pan.
Toss plums with 1 tbsp flour; set aside.
Beat sugar, butter, and vanilla until fluffy; beat in eggs.
Sift 1 ½ cups flour, salt, and baking soda; mix into wet ingredients.
Fold in floured plums and pour into loaf pan.
Sprinkle brown sugar on top.
Bake 45-50 mins, cool 15 mins, then transfer to a wire rack.
