 Marinade 

3 TB soy sauce 
2 TB gochujang 
3 TB cooking rice wine 
2 tablespoons honey
4 cloves garlic - micro grated 
1 teaspoon ginger - micro grated 
1 teaspoon sesame oil
3-4 TB apple grated

4 pork chops 



Serving for dinner

 Quick Pickles (Oi Muchim Style, but veggie-flexible)
Got extra zucchini, kale stems, or cabbage ribs?

Thinly slice & toss with:

1 tbsp rice vinegar
1/2 tsp salt
1/2 tsp sugar (or omit for strict low-carb)
1 tsp gochugaru
1 tsp sesame oil
Touch of garlic
Let it sit 10+ minutes. Bright, punchy, and cuts through the richness.


Banchan Ideas with What You’ve Got:

1. Quick Zucchini Muchim (Zucchini Salad)

Thinly slice zucchini, sprinkle lightly with salt. Let sit 10 min, squeeze out water.

Toss with:

1 tsp sesame oil
1 tsp rice vinegar
½ tsp gochugaru (or a pinch of red chili flakes)
Garlic (minced)
Sesame seeds

2. Cabbage & Kale Slaw (Kimchi-Vibes Lite)

Shred cabbage & kale.

Toss with:

Salt, let wilt 15 min, then squeeze excess liquid
1 tbsp rice vinegar
1 tsp fish sauce (or soy sauce)
1 tsp sugar
Crushed garlic & a touch of gochugaru
Optional: tiny drizzle of sesame oil

3. Broccoli Banchan (Simple & Nutty)

Steam broccoli until tender-crisp.

Toss with:

Toasted sesame oil
Minced garlic
Soy sauce or tamari

Roasted sesame seeds

4. Gochujang Butter Corn

Boil or grill the corn.

Mix softened butter with:

1 tsp gochujang
1 tsp honey
pinch of garlic powder
tiny splash of soy sauce or miso if you’re feeling fancy
Slather that on the hot corn. Finish with sesame seeds and green onion. Maybe even some crumbled seaweed if you’ve got it.
