DRY
1 Cup Gluten Free All Purpose Baking Flour – king arthur flour
1 Cup / 198g Pistachio Meal
1 Tbsp. Baking Powder
1 Tbsp. Ground Cardamom
1/2 tsp Xanthan Gum
1/2 tsp Salt
WET
1/2 cup /120 grams Sugar - lightly sweet
1/2 cup / 1 stick Softened Unsalted Butter
1 Lemons Zest
1/2 Cup Greek yogurt or sour cream
3 eggs – At room temperature
1/2 tsp Vanilla Extract
ADD IN: raspberry, white chocolate chips and chopped pistachios
Instructions
Preheat oven to 350°F
Grease loaf pan with butter and line with parchment paper. Grease again.
Dry
In a bowl add the Gluten Free flour, Pistachio Meal, Cardamom, Baking Powder, Xanthan Guam, and Salt.
Wet
In bowl add: Sugar and 3 Eggs. to a mixer and beat until light and fluffy.
Next add the softened butter, lemon zest, sour cream and vanilla extract. Mix well.
Add the dry ingredients to the Wet bowl with wet ingredients and until combined then add in the frozen or fresh raspberries and top with chopped pistachios and raw sugar.
Pour into the loaf pan. Distribute the mix evenly.
Place in the pre-heated oven and bake for around 60 minutes.
Check on the loaf and and stick a toothpick or slim knife in the middle.
If it comes out clean, with no solids, then it’s done.
