smashed chickpea salad for sandwhiches
basic smashed chickpea salad
3 TB olive oil
2 TB tahini
1 1/2 TB fresh lemon juice
1-3 cloves grated garlic
1/4 cup minced shallot or onion
1 15 oz can chickpeas, simmer in liquid 10 minutes then smash and then cool
1/2 cup finely chopped celery
1/2 cup finely chopped green onions
1/4 cup finely chopped dill pickle
2 teaspoons minced fresh dill (or other herbs desired)
In a large bowl, mash the chickpeas with a large fork or potato masher until flaked in texture.
Stir in the celery, green onions, pickles, mayonnaise, and garlic until combined.
Next, combine with mustard and dill, and season with the lemon juice, salt, adjust to taste.
