PLACE IN THE FOOD PROCESSOR
1 15 oz can chickpeas drained
handful parsley
3-4 cloves garlic rough chopped
1/2 onion diced
1/2 jalapeno diced
1/2 tsp cumin
1/4 tsp coriander
1/2 tsp salt
PLACE IN A MIXING BOWL
1 egg
1 cup frozen corn, thawed and lightly sauteed with seasoning of choice - used adobo powder
3 tbsp almond flour/ wheat flour/ great crumbs (used almond flour)
coarsely grind the food processor ingredients and then add to the mixing bowl with the eggs, corn, almond flour, and mix to combine.
chill the mixture for an hour before forming cakes.
FORMING CAKES
keep them small, used a small cookie scoop to measure.
scoop the amount out then roll it in your choice panko, corn starch, potato starch, farofa, etc
used corn starch because it was on hand.

1st batch we fried the cakes in vegetable oil, once you put the cakes in the pan don't move them for a few minutes until the bottom has a golden crust. once the bottom has a good crust flip to the other side and cook for a few minutes to get a good crust. the cake should be cooked thru.
