Spiced Apple Custard (Gluten-Free, No Refined Sugar)
Creamy, cozy, naturally sweetened — great warm or chilled.
Ingredients (serves 4–6):
Apple base:
2 medium apples (peeled, chopped)1/4 cup water
1/2 tsp cinnamon
Pinch of nutmeg and ginger
1 tsp lemon juice
Optional: 1 soft Medjool date or 1 tsp maple syrup (depending on your sweetness level)
Custard base:
3 large eggs1 1/4 cups milk or dairy-free milk (almond, oat, coconut milk all work)
1/4 cup heavy cream or coconut cream (optional for extra richness)
1/2 tsp vanilla
Pinch of salt
Instructions:

Make apple purée:
Cook apples, water, lemon juice, spices, and optional sweetener in a saucepan for about 10–12 minutes until soft. Blend until smooth. Cool slightly. -
Preheat oven to 325°F (160°C). Lightly grease ramekins or a small baking dish.

Whisk custard base:
In a bowl, whisk eggs, milk, (cream if using), vanilla, and salt. Stir in the cooled apple purée until smooth. -
Bake in a water bath:
Pour the custard into ramekins or a baking dish. Set them in a larger pan, and pour hot water halfway up the sides. This helps it cook gently and evenly. -
Bake for 35–40 minutes, or until just set but still a little jiggly in the center. Don’t overbake — it’ll firm up as it cools.

Cool and chill (or serve warm):
Let cool completely for a chilled dessert, or serve slightly warm for a cozier feel.
